1 onion
1-2 garlic cloves (chopped)
1 t. fresh ginger (minced)
Saute in pan with nonstick cooking spray, add:
2 cans fat free chicken broth
1 can Rotel
1 can whole stewed tomatoes
1/4 C. fresh cilantro
1/4 t. salt
1/2 t. pepper
1 package frozen mixed veggies (any kind will do)
2 cups chopped cabbage
Bring to a boil and simmer for 20 minutes.
