Melinda Cooks for One (or Two) ~ Sweet Potato Soufflis

4 t sugar, divided
1 large sweet potato
(about 12 oz.), peeled and cubed
1 t lemon juice
1/2 to 3/4 t salt
1/8 t ground nutmeg
1 T butter or margarine
4 t all-purpose flour
1/2 cup milk
2 eggs, separated
1/4 cup mini marshmallows

Grease two 2-cup souffli dishes or custard cups; sprinkle each with 1/2 t of sugar. Set aside. Place sweet potato in a saucepan; cover with water. Cover and cook until tender, about 10-15 minutes; drain well. Add lemon juice, salt and nutmeg. Mash potato mixture (should have about 1 cup); set aside to cool. In another saucepan, melt butter; stir in flour and remaining sugar until smooth. Gradually add milk; cook and stir until thickened and bubbly. Remove from the heat. Beat egg yolks in a small bowl; stir in mashed potato. Combine potato and milk mixtures; set aside. In a mixing bowl, beat egg whites until stiff peaks form; gently fold into potato mixture. Spoon into prepared dishes. Top with marshmallows. Bake, uncovered, at 350: for 35-38 minutes or until a knife inserted in the center comes out clean. Serve immediately. 2 servings.

Melinda Cooks for One (or Two) ~ Little Dixie Pound Cake

3 T butter (no substitutes), softened
6 T sugar
1 egg
6 T all-purpose flour
pinch baking soda
7 t buttermilk
1/4 t vanilla extract
1/8 t orange extract

In a small mixing bowl, cream butter and sugar. Beat in egg. Combine flour and baking soda; add alternately with buttermilk to creamed mixture. Blend in extracts. Pour into a greased mini loaf pan (5 3/4 in. x 3 in. x 2 in.). Bake at 350: for 30-35 minutes or until cake tests done. Cool for 10 minutes; remove from the pan to cool on a wire rack. 1 mini loaf.

Melinda Cooks for One (or Two) ~ Baked Pear

1 pear, cored and thinly sliced
1 T butter or margarine
1 t sugar
Ground nutmeg

Place pear slices in an ungreased 2 cup baking dish. Dot with butter; sprinkle with sugar and nutmeg. Cover and bake at 350: for 40-50 minutes or until tender. 1 serving. To prepare in a microwave, cover and cook on high for 3-4 minutes or until pear is tender.
