I picked the first okra of the season yesterday. Here is my favorite way to cook it.
Wash and slice the okra and put it in a colander. Pour boiling water over the okra and let drain. Put it in a bowl and toss with a little vegetable or olive oil. Then toss with seasoned cornmeal until completely coated. Put it in a single layer in a baking pan lined with parchment paper. Bake at 350-400 degrees for 30 minutes or longer depending on how crunchy you like it. It can also be prepared this way from the frozen state.
